These are old-fashioned, not-too-sweet cookies. I like the fact that I can store the dough in the freezer, pull out just enough to make a small batch and save the rest for another day. This old recipe came from a lady who was still making these cookies in her eighties.
Ingredients:
- 1 cup butter
- 2 cups dark brown sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 1/2 cups flour, sifted
Directions:
- Blend butter and sugar until no longer grainy.
- Add eggs and beat well. Stir in vanilla.
- Sift baking powder and soda with the flour; add dry mixture to rest of ingredients.
- On a floured board, work into a soft dough. Shape dough into long rolls (I made two) about 1 1/2 inches in diameter each. Wrap the long rolls into cloth or wax paper; refrigerate or freeze overnight. (I froze mine.)
- To Bake: Preheat oven to 375 degrees F. Cut desired amount of dough roll into 1/4 inch slices. Place slices on a cookie sheet lined with parchment paper. Bake for about 8 to 10 minutes until light brown at 375 degrees F. Carefully remove cookies from pan to cool on a wire rack. (Depending upon the length of your dough rolls and the thickness of your slices, you will get 40 to 80 cookies out of this recipe.)
